Easy & Delicious Christmas Treats that are Dietitian Approved!

This Christmas, if you are thinking of what gift to give to your loved ones and friends, let me tell you this…nothing says “I care for you” better than “home cooked/baked sweets”. And if you are worried about calorie count of traditional desserts, here are some easy breezy and trendy sweets with a healthy twist!

Strawberry Cupcake

Ingredients:

  • ¾ cup whole-wheat flour
  • ½ cup maida
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup sugar
  • ½ cup butter (or coconut oil)
  • 2 large eggs OR 1/2 cup applesauce (for vegetarian version)
  • 2  teaspoons vanilla essence
  • ½ cup milk (Nonfat is even better)
  • a dozen strawberries, cleaned
  • 2 tablespoons baker’s sugar/ powdered sugar

Preparation:

  1. Preheat oven to 350°F/177°C.
  2. Take wheat flour, maida, baking powder and salt in a bowl and whisk together.
  3. Beat sugar and butter (or coconut oil) in a large mixing bowl with an electric hand mixer on medium speed until combined. Add eggs (or applesauce) and 2 teaspoons vanilla; beat until well combined.
  4. Mix in dry ingredients, milk and wet ingredients and mix on a low speed.
  5. Put cupcake liners in cup  molds, now pour in the batter in each cup
  6. Bake the cupcakes on the same heat for 20 minutes. Take out and let it cool.
  7. Cut a cone-shaped hole into the top of each cupcake and fill it with one of the strawberries.
  8. Combine cream, baker’s sugar and the little  vanilla in a mixing bowl; beat well till becomes frothy. Frost each cupcake with this whipped cream and strawberries

Nutrition Highlight: Can be made into a vegan recipe by substituting butter and eggs. And strawberry gives it a juicy punch 🙂

 

Chocolate Almond Bark

 Ingredients:
  • Dark Chocolate chips, 2 cups
  • Almonds, cut, 1 cup
  • parchment paper
Preparation:
  1. Melt the dark chocolate. You can melt it on stove top by heating evenly on medium-low flame for 2-3 minutes or by microwaving for 1 minute.
  2. Add in the nuts and mix well
  3. Now line the inside of the tray with the parchment paper .Pour in the chocolate mixture, let it even out.
  4. Set in the fridge for 2 hours. Cut in pieces and your chocolate-almond bark is ready to be eaten 🙂

Nutrition Highlight: Dark Chocolate is Good for Heart and so are nuts 🙂

Chocolate Dipped Strawberries

 Ingredients:
  • Strawberries, 12
  • Dark  Or regular Chocolate chips 1 1/2 cup
Preparation:
  1. Melt the dark chocolate. You can melt it on stove top by heating evenly on medium-low flame for 2-3 minutes or by microwaving for 1 minute.
  2. Dip individual strawberries one by one in the molten chocolate and set aside on a tray
  3. Refrigerate the strawberries for half an hour so the chocolate will set and solidify.
  4. You can use the same recipe for almost any fruit. Some popular ones are Dipped Apples, Dipped Apricots, Dipped Dried Pineapples etc.

Nutrition Highlight: Dark chocolate and Strawberries both are excellent sources of Antioxidants (great for skin) 🙂

 

Chocolate Fudge Balls

Ingredients:

  • Dates, deseeded and pitted, 16
  • Cocoa Powder 1/4th cup
  • Dark Chocolate, 4 squares
  • Almonds, 1 cup, soaked and skin removed OR 1 cup walnuts
  • Pistachios, 1/4th cup
  • Coconut flakes or shredded dry coconut, 2 tablespoons

 

Preparation:

  1. Blend dates, almonds, pistachios, cocoa powder, dark chocolate together for 2 minutes. Scrap off the edges and then blend again for a minute. Do Not Add Any Water!
  2. Oil your palms with very little oil. Take a tablespoon of thick better from the blender and roll in into ball shape.
  3. Dip it into the bowl of coconut flakes and roll so that all sides are covered in coconut. You can also coat the balls in nuts or powdered chocolate per your preference.

Nutrition Highlight: Dark Chocolate (antioxidants), Almonds/Walnuts (Good Fats), Pistachios ( rich in magnesium, zinc, selenium), And dates (natural sweetness & fiber)

 

I am  so not against traditional rich desserts and certainly not in the favor of any “diet” recipes because let’s just face it, if we make a diet dessert we stuff our face with twice the amount! I would rather you eat the regular portion of the original delicacy and stop after that! What is neat about these recipes is that they don’t focus on taking away or substituting anything from the recipe, instead they focus on including more of ingredients, like fruits and nuts and dark chocolate…what’s not to like about that?

My personal favorite is chocolate almond bark.
